1 lg head of broccoli (or use frozen and it doesn't matter how much you use...use more if you like broccoli a lot) 1/4 c. chopped onion 2 cans chicken broth 3/4 cup butter 3/4 cup flour 1 quart half/half 1 8oz. jar of cheese whiz. (You can also use a mixture of real cheese with the whiz, or 100& real cheese. If you use real cheese, you'll have to use more than 8 oz to get a similar flavor) I've never tried it, but Velveeta might be good, too. 1 cup shredded chicken. (or as much as you want) GENTLY steam broccoli. In another pot cook onion in chicken broth over medium heat until semi-tender. In another pot, one large enough to hold ALL ingredients, melt butter gradually, mix in flour to make a roux, being careful not to scorch or over heat. Add half and half slowly using a wire whisk to mix. To that, add the cheese and mix again until smooth. Add the chicken broth and onions, shredded chicken and lightly steamed broccoli to the soup and stir. Voila! The soup will thicken as it cools a little bit. You can adjust all of these ingredients to make it the perfect consistency and taste for you. If you want a thicker soup, make a thicker roux with more four. If you like it thinner, just add more chicken broth.
